Ia mempunyai pelbagai fungsi dalam badan termasuklah membantu dalam penyerapan vitamin larut lemak; A, D, E dan K serta merupakan sumber tenaga yang terbesar. Namun demikian, tidak semua lemak diciptakan sama. Ada sebahagian lemak dikenali sebagai lemak baik (baik untuk jantung) dan ada juga lemak jahat yang akan membahayakan kesihatan anda.<\/span><\/p><p align=\"JUSTIFY\"><span lang=\"en-US\"><b>Lemak trans <\/b><\/span><\/p><p align=\"JUSTIFY\"><span lang=\"en-US\">Lemak trans umumnya terdapat dalam dua bentuk; semula jadi dan artifisial. Lemak trans artifisial atau buatan pada asalnya merupakan lemak tak tepu yang berasal daripada minyak sayuran yang mengalami hidrogenasi; proses perindustrian yang melibatkan penambahan hidrogen untuk meningkatkan jangka hayat makanan dan meningkatkan tekstur dan rasa. Sebaliknya, lemak trans semula jadi boleh didapati dalam jumlah kecil dalam daging dan produk tenusu seperti daging lembu, kambing dan susu.<\/span><\/p><p align=\"JUSTIFY\"><span lang=\"en-US\">Tambahan pula, kajian sistematik telah mendapati bahawa lemak trans bukan sahaja meningkatkan risiko penyakit jantung kronik malahan mengganggu sel membran. Kebiasaanya, lemak tepu wujud dalam bentuk pepejal pada suhu bilik dan berasal daripada sumber haiwan seperti lemak daging, produk tenusu dan kulit poultry (ayam, itik). Namun, ia juga boleh didapati dalam sumber tumbuhan seperti minyak kelapa dan sawit. Ia dikategorikan kepada dua kumpulan; asid lemak mono tak tepu dan poli tak tepu. Lemak tak tepu kebiasaannya didapati dalam bentuk cecair pada suhu bilik dan berasaskan tumbuhan. Mereka dianggap lemak yang menyihatkan jantung kerana reputasi yang baik dalam memperbaiki profil lipid dan mengurangkan plasma kolesterol. Pengambilannya dikaitkan dengan risiko penyakit kardiovaskular yang lebih rendah.
